Explain why you chose each of these chocolatiers.
Jacques Torres The first time I saw “Chocolate with Jacques Torres” on TV I was dumbfounded. I was studying in Canada at the time and I immediately called home to tell my mom about the amazing things this man could do with chocolate! This was the first time I can clearly remember seeing chocolate as an art form. I was hooked.
Seeing his website on the research list made me realize what an impact he made me. There I was, a math undergrad with no culinary exposure, secretly dreaming of becoming a chocolatier – and now here I am, 8 years later starting this program. I still think it was Jacques Torres that sparked and kept that secret passion alive.
The products he offers on his website are elegantly sumptuous and capture the essence of what I think fine chocolates should be.
Belle Fleur Fine Chocolates I was immediately impressed by the artistry of these chocolates. Each of these bonbons was like a mini canvas which immediately had my mind buzzing with ideas for my own chocolates. I also liked that their chocolates were made daily and that there was a selection of single origin chocolates.
Bittersweet: the chocolate cafe The bittersweet café website is just so sweet. Everything from their chocolates to their packaging to their display to their café décor to the owners themselves is just so warm, friendly and inviting. (Of course their nice references to visiting Trinidad had nothing to do with me choosing them ^_^)
What differentiates these chocolatiers from the others that you researched?
Each of these chocolatier’s work made me incredibly excited about making my own chocolates. The 3 differ in scale of operation I think but the richness/quality/presentation of their products I found so enticing.
Give examples of each chocolatier's most important product that inspired you.
Jacques Torres There are many, many lovely things on this website (the Chocolate All Year Long Plan being the loveliest) but as for the most important/inspirational piece I am compelled to discuss his chocolate painting he made for his TV show: Chocolate with Jacques Torres. He constructed a solid chocolate easel and frame. He covered the frame in gold powder (or leaf, perhaps) and made a canvas out of white chocolate. Then he had an artist friend paint a vase of flowers with cocoa butter/food colouring paints he had prepared. This was extremely exciting to me as he combined so many artistic disciplines and media in one project. (I can’t wait to try this!)
Belle Fleur Fine Chocolates Just one?! Impossible! Every bonbon pictured on this website is beautiful. The Cappuccino cup with layers of coffee and fresh cream was the most adorable though. I’m rather interested in seeing a cross-section of this cup and how they form the cup itself.

“Each contains a variety of flavors, from hand-rolled Dark, Fleur de Sel, raspberry liquor-spiked Framboise, and the scintillating Spicy, to the elegant finish of heart-shaped Blood Orange, Passion fruit and Cinnamon.”
They looked adorable and the flavor combinations sounded delectable. Most inspiring was the café idea itself. A warm, inviting locale to entice customers to come in and enjoy these little chocolate treasures.
